Gluten-free Banana Bread

 

Makes one 9 x 5 in loaf

 

Ingredients:

2-3 large                 Ripe bananas

3 whole                   Eggs

¼ cup                       Maple syrup

¼ cup                       Canola oil

1 tsp                         Vanilla extract

1 tsp                         Cinnamon

1 tsp                         Baking soda

1 tsp                         Baking powder

¼ tsp                         Salt

3 cups                      Cup4Cup Multipurpose Gluten Free Flour

 

Method:

  1. Preheat oven to 350° F and spray a 9 x 5 loaf pan with cooking spray.

  2. Mash bananas in a large bowl.

  3. Add eggs, maple syrup, canola oil, vanilla extract, cinnamon, baking soda, baking powder, and salt to the bowl and whisk until combined.

  4. Fold in flour until fully mixed.

  5. Pour batter into prepared loaf pan and bake for 50 minutes or until a toothpick inserted into the middle comes out clean.

  6. Slice and serve warm with butter and enjoy!
