Loaded Baked Potatoes

Portions: Serves 3-5​
​
Ingredients:
Amount Item
6-10 Medium potatoes, any variety
3-4 15 oz cans Beans, any variety (Chili, refried, black)
​
Other desired toppings: Lettuce or spinach, tomatoes, olives, bell pepper, green onion, cheese, sour cream (or Greek yogurt), guacamole, salsa.

Method:

Preheat oven to 425° F.

Wash all potatoes.

Carefully, use a fork to poke small holes around each potato.

Place potatoes on a baking sheet, and bake for 45 minutes or until the potatoes are soft.

Meanwhile, add beans to a pot and cook on medium heat until warm, stirring occasionally.

Slice, chop, and set out all toppings.
-
Once the potatoes are baked, assemble by splitting open a potato and adding all desired toppings.
