Loaded Baked Potatoes

Portions: Serves 3-5​

Ingredients:

Amount                Item

6-10                     Medium potatoes, any variety

3-4 15 oz cans    Beans, any variety (Chili, refried, black)

Other desired toppings: Lettuce or spinach, tomatoes, olives, bell pepper, green onion, cheese, sour cream (or Greek yogurt), guacamole, salsa.

Method:

  1. Preheat oven to 425° F.

  2. Wash all potatoes.

  3. Carefully, use a fork to poke small holes around each potato.

  4. Place potatoes on a baking sheet, and bake for 45 minutes or until the potatoes are soft.

  5. Meanwhile, add beans to a pot and cook on medium heat until warm, stirring occasionally.

  6. Slice, chop, and set out all toppings.

  7. Once the potatoes are baked, assemble by splitting open a potato and adding all desired toppings.
