Valentine’s Day Chocolate Peanut Butter Heart Cups

Portions: Makes ~24 mini hearts

Ingredients:

Amount                  Item

¾ cup                     Smooth Adam’s peanut butter

1/3 cup                  Coconut flour (or whatever other flour you have)

1 Tbsp                    Maple syrup

1 tsp                       Vanilla extract

1 bag (12 oz)         Dark chocolate chips

*You will also need a silicone mold or mini muffin tin. I used a heart-shaped silicone mold from Amazon.

Method:

  1. Mix peanut butter, coconut flour, maple syrup, and vanilla extract in a bowl and set aside.

  2. Melt the chocolate chips by microwaving in a microwave safe bowl in bursts of 10 seconds, mixing in between until chocolate is completely melted.

  3. Add melted chocolate into the bottom of each mold. Then roll a small amount of the peanut butter mixture into a ball and place it in the center of the chocolate. Add more melted chocolate on top and repeat for all the molds.

  4. Refrigerate for at least an hour and serve. Keep any leftovers refrigerated so they don’t melt!
