Silken Tofu Enchiladas
Serves 4-6
Ingredients:
12 Corn Tortillas
19 oz Enchilada sauce
1 Tbsp Canola oil
1 Medium Onion, diced
1 Clove Garlic, minced
1 tsp Cumin
1 Package Silken tofu
1 Tbsp Nutritional Yeast
To taste Salt and Pepper
1 Bunch Chopped green onions

*Optional: Shredded cheese, sliced black olives, avocado
Method:

Preheat oven to 350° F.

Heat canola oil in frying pan on medium heat. Sauté onion until soft and translucent (~2 minutes). Add garlic and cumin and cook an additional 2 minutes until fragrant.

Using food processor or blender, blend the onion mixture, tofu, and nutritional yeast until smooth. Blend in salt and pepper to taste.

Pour a thin layer of enchilada sauce onto the bottom of a 9 x 13 in baking dish.

Add tofu filling, green onions, and olives to tortillas. Then roll them up and place them seam-down in the dish.

Once the dish is full of rolled up tortillas, cover them with the remaining enchilada sauce. Optional: sprinkle cheese on top.

Bake in preheated oven for 30 minutes.

Add additional toppings, serve, and enjoy!
