Thanksgiving Cabbage Loaf

 

Serves 5-7

 

Ingredients:

1 medium             Green Cabbage

1 Quart                   Half-n-half

1 Cup                       Flour

2 tsp                         Salt

1 stick                      Butter or vegan alternative

1 package              Saltine crackers

 

Method:

  1. Preheat oven to 350° F.

  2. Remove outer leaves of cabbage, wash, and carefully remove core with knife.

  3. Cut cabbage into small pieces and place in large covered kettle with an inch of water. Steam for 5-10 minutes.

  4. Drain cabbage well and pat dry.

  5. Blend half-n-half, flour, and salt in blender.

  6. In greased pan, layer the cabbage, butter, and crackers from the bottom to the top.

  7. Pour half-n-half mixture over layered cabbage.

  8. Bake until cooked through and not runny (~40-50 minutes). If not cooked all the way but the top is burning, cover the dish with aluminum foil and continue baking until cooked.

  9. Serve and enjoy!
