Tofu Breakfast Scramble

 

Serves 3-5

​

Ingredients:

1 Package              Firm Tofu

Various                   Diced vegetables (bell pepper, onion,                                                mushroom, zucchini, squash)

1 Tbsp                    Canola oil

1 Tbsp                    Soy sauce

1 tsp                       Turmeric

½ tsp                      Garlic powder

½ tsp                      Onion powder

1 ½ Tbsp                Nutritional yeast

2 Tbsp                    Chives

1 tsp                       Oregano

1 tsp                        Dried rosemary

 

Method:

  1. Drain water from tofu and pat dry with paper towel

  2. Wash and dice desired veggies in desired amounts

  3. Heat canola oil in skillet on medium heat. Add diced veggies and cook until soft (~10-15 minutes)

  4. Dice tofu and add to skillet. Mix tofu with veggies and break up the tofu until it is in small pieces.

  5. Mix in soy sauce and all seasonings and cook an additional few minutes until fragrant. Taste and add more seasonings if desired.

  6. Serve immediately and enjoy!
