Zucchini Chocolate Chip Cookies​

Portions: ~30 small cookies

 

Ingredients:

Amount                  Item

1 ½ cup                   Grated zucchini

½ cup                       Nut butter (Almond, peanut, etc.)

½ cup                       Maple syrup

1 tsp                         Vanilla extract

2 cups                      Rolled oats

¾ cup                       Shredded coconut

½ cup                       Chocolate chips

1.5 tsp                     Cinnamon

1 tsp                         Baking powder

¼ tsp                         Salt

 

Method:

  1. Preheat oven to 375° F and line a baking sheet with parchment paper or spray with oil spray.

  2. Mix zucchini, nut butter, maple syrup, and vanilla together in a bowl.

  3. Then add the rest of the ingredients and mix well.

  4. Use a cookie scoop or heaping tablespoon to drop batter onto the baking sheet.

  5. Bake for 13-16 minutes.

  6. Remove from oven, let set, and enjoy.
